CRISP NUTS   
  Ingredients :
    3 egg whites
    1 ½ teaspoon salt
    ¾ cup sugar
    2 teaspoons Worcestershire sauce
    2 tablespoons paprika
    1 ½ teaspoon cayenne or black pepper
    1 ½ cups blanched almonds, dried
    1 ½ cups nuts
    1 ½ cups pecans
    6 tablespoons soft, unsalted butter

  Preparation:

Preheat oven to 325 °F (170 °C).

Beat egg whites until very foamy with salt. Gradually add sugar, Worcestershire sauce, paprika and cayenne. Add nuts and butter and combine well.

Spread nuts in a baking pan.

Bake nuts, stirring frequently, until crisp and golden.

Spread nuts on a sheet of foil and cool. Break up clusters if necessary.
