SMOKED TROUT AND CREAM CHEESE SANDWICH   
  Ingredients :
    1 loaf of white bread, no crust, cut horizontally (if possible)
    14 oz (400 g) smoked trout, sliced thin
    16 oz (450 g) cream cheese
    2 green onion or chives, green part minced

  Preparation:

Spread cream cheese on side of bread slices.

Place slices of smoked trout and green onion on top.

Cover and cut as desired.

Place in serving dish and cover with damp cloth until serving time.

Different presentations:
Trout canapes
Spread cream cheese over slices of wholemeal or baguette bread and cover with trout slices. Decorate with chives or green onion.

Rolled Canapes
Place bread slice (no crust) on a working surface. Flatten bread with a rolling pin to make it thinner.
Spread cream cheese evenly, cover with trout slices and sprinkle green onion on top.
Roll up each slice, jelly roll, style to the desired thickness.
Wrap roll in a damp cloth, twisting on both ends and freeze for 15 minutes.
To serve, using an electric knife, cut each roll in slices. Transfer to a platter and garnish with chopped parsley or minced green onion.
