ZUCCHINI TART   
  Ingredients :
    3 large zucchini, cut julienne
    2 large onions, finely chopped
    4 garlic cloves, finely chopped
    3 tomatoes, peeled, seeded and chopped
    2 eggs, lightly beaten
    ½ cup skimmed milk
    7 tablespoons flour
    Salt
    1 tablespoon oregano
    1 tablespoon baking powder
    2 tablespoons low calorie cheese, shredded
    ½ parsley leaves, chopped
    Oil

  Preparation:

Combine zucchini, onions, garlic and tomato. Add eggs, flour, milk and parsley and combine.

Add baking powder and stir. Season to taste.

Lightly brush with oil and flour a tart pan. Pour zucchini mixture. Sprinkle cheese on top.

Bake in preheated oven 350°F 180°C during, approximately, 30 minutes.Serve.
