GRILLED HAM, CHEESE AND PEAR SANDWICH   
  Ingredients :
    8 tablespoons clarified butter
    16 slices of white bread
    8 slices of gruyere, emmenthal or similar
    8 slices prosciutto or ham
    1 or 2 pears, peeled, cored and cut in slices

  Preparation:

To clarify butter: melt butter in a small saucepan over low heat. Be careful butter does not burn. Remove from heat and let stand 1 minute. Discard foam from the surface with a spoon. Pour off clear yellow liquid into a bowl and discard milky solids left in pan.

Lay 8 slices of bread on a work surface. Top with cheese slices, ham and pear slices. Top with remaining bread.

Brush a large skillet with clarified butter and warm over medium heat. Place sandwiches in the pan and weight them down with a pan lid. Cook until golden brown and turn on the other side. Add more clarified butter if necessary. Remove from pan when both sides are golden and cheese will have melted. Keep warm. Repeat with remaining sandwiches. Cut in half, diagonally to serve.
