BLUE CHEESE AND POTATO SALAD   
  Ingredients :
    2/3 cup olive oil
    1/3 cup apple cider vinegar
    ¼ cup white onion, finely chopped
    1 tablespoon fresh parsley, chopped
    1/3 cup green onion, chopped (white and green parts)
    1 tablespoon Dijon mustard
    2 teaspoons honey
    1 ½ teaspoon lemon peel
    3 lb (1.300 K) white potato, cooked and quartered
    8 slices of bacon, fried until crisp, drained and crumbled
    12 -14 lettuce leaves, hand cut in medium size pieces
    ½ cup blue cheese crumbled
    1 hard- boiled egg, grated
    Salt
    Pepper

  Preparation:

Whisk in oil, vinegar, white onion, 1 tablespoon green onion, mustard, parsley, honey and lemon peel in a large bowl until blended. Season with salt and pepper.

Add potatoes to dressing and combine gently. Season to taste. Cool.

To serve, place lettuce around edge of platter, place potato salad in the center and sprinkle over with bacon, blue cheese, egg and remaining green onion.
