BAKED SWEET POTATOES WITH HONEY AND LEMON JUICE   
  Ingredients :
    4 lb 8 oz (2 k) sweet potatoes, peeled, cut in medium size pieces
    6 tablespoons butter
    3 – 4 tablespoons honey
    1 – 2 teaspoons lemon juice
    Salt
    Pepper

  Preparation:

Arrange sweet potatoes in an glass ovenproof mold.

Combine butter, honey and lemon juice in a small saucepan and heat until butter melts. Pour mixture over sweet potatoes. Season with salt and pepper.

Bake in preheated oven at 350°F (!80°C), turning occasionally, until tender.

Serve.
