SCALLOPED FISH   
  Ingredients :
    ¼ cup butter or margarine
    1 cup cracker crumbs
    1 tablespoon dry parsley
    ¼ teaspoon salt
    Dash of pepper
    1 lb (450 g) fish fillets (flounder or sole)
    1/3 cup cream or milk

  Preparation:

Place butter in 1 quart casserole. Microwave on HIGH (100%) for 45 seconds to 1 minute or until melted. Stir in cracker crumbs, parsley, salt and pepper until well coated. Set aside.

Arrange fish, thickest part towards the outside, in a 10 inch pie dish. Cover with plastic wrap. Microwave on HIGH (100%) for 4 minutes.

Turn fish over. Sprinkle with crumb mixture. Pour cream over all. Microwave, uncovered on HIGH (100%) for 4 to 5 minutes or until fish flakes easily with a fork. Allow to stand 5 minutes before serving.
