CLASSIC AIOLI SAUCE   
  Ingredients :
    ½ fresh garlic, peeled and coarsely chopped
    2 teaspoons coarse salt
    2 cups olive oil

  Preparation:

Blend ¼ cup garlic with 1 teaspoon salt and and 2 talblespoons olive oil until soft and creamy.

Transfer half of this mixture to a mortar and Add ¾ cup plus 2 tablespoons olive oil very slowly (1 to 2 teasoons at a time), stirring constantly and vigorously. This process will take 15 minutes. Mixture will become thick and glossy. If oil is added too quickly sauce will separate. Once ready transfer to a bowl and prepare remaining half.
