BALSAMIC MAYONNAISE   
  Ingredients :
    1 large egg, at room temperature
    2 tablespoons balsamic vinegar
    1 tablespoon Dijon mustard
    ¾ cup vegetable oil, approximately
    ½ cup olive oil
    Salt
    Pepper

  Preparation:

With the blender running add gradually the vegetable oil and the olive oil until mixture thickens. Transfer to a bowl and stir remaining balsamic vinegar.

Store covered in the refrigerator until ready to use.
