LETTUCE, SPINACH AND ARUGULA SALAD WITH WALNUT MUSTARD DRESSING   
  Ingredients :
    Salad:
    1 cup lettuce leaves, handcut in medium size pieces
    ˝ cup arúgula, handcut in medium size pieces
    ž cup spinach leaves
    ˝ cup nuts, chopped

    Dressing:
    2 tablespoons mayonnaise
    1 tablespoons fresh lemon juice
    2 tablespoons olive oil
    ź cup nuts or pecans, chopped
    2 teaspoons mustard
    Salt
    Pepper

  Preparation:
Salad:
Combine lettuce, arúgula and spinach leaves in a salad bowl.

Dressing:
Blend oil with nuts, lemon juice and mustard. Pour into a small bowl and combine with mayonnaise. Season to taste.
Add dressing to lettuce and toss to coat evenly.
Serve and sprinkle with nuts.
