PASTRY CREAM No. 2   
  Ingredients :
    6 egg yolks
    1 ¾ cups milk (evaporated if possible)
    ¾ cups sugar
    ½ teaspoon vanilla

  Preparation:

Combine yolks and milk, strain, and add sugar.

Cook in a double boiler over simmering water, whisking constantly until mixture thickens.

Remove from heat, add vanilla and transfer to a bowl.

Lightly pat surface with butter to prevent skin from forming.
