SAUTEED SNOW PEAS WITH CARROTS AND CASHEWS   
  Ingredients :
    6 – 7 medium size carrots cut in thin slices, diagonally
    9 oz (250 g) snow peas, trimmed and cut in half diagonally
    ¾ cup cashews, halved
    2 – 3 tablespoons unsalted butter
    Salt
    Pepper

  Preparation:

Cook carrots in boiling water until crisp tender. Drain.

Melt butter in a large skillet and stir in carrots and cashews. Add snow peas and cook for 1 or 2 minutes until crisp tender. Season to taste and remove from heat. Serve immediately.
