CHICKEN, SPINACH AND MANGO APPETIZERS   
  Ingredients :
    6 pita bread, halved horizontally
    ½ chicken breast, cooked and finely chopped
    8 pecans, finely chopped
    1 lb 2 oz (500 g) spinach leaves
    1 small mango, peeled and finely chopped
    Mayonnaise (½ cream Cheese and half mayonnaise may be used )
    Salt
    Pepper

  Preparation:

Cut each pita half in 4 in (8 cm) rounds with a cookie cutter. Cut each round in 4 (there will be 4 triangles per each round).

Blanch spinach and chop. Transfer spinach to a bowl and combine with chicken and mango. Combine with the necessary amount of mayonnaise and season to taste.

Serve as a dip with pita bread triangles.
 
        Yield: 40 – 45 triangles
