MIXED SALAD, FIGS AND ROQUEFORT CHEESE WITH HONEY MUSTARD VINAIGRETTE   
  Ingredients :
    1 lb (500g) mixed lettuce, in big pieces
    3 ½ oz (100 g) Roquefort cheese crumbled
    ¾ cup caramelized pecans
    8 fresh figs cut in 8
    Salt
    Pepper
    3 tablespoon sugar
    ½ tablespoon butter

    Dressing:
    ½ cup mayonnaise
    1 ½ tablespoons honey
    2 tablespoons maple syrup
    2 tablespoons Dijon mustard
    2 tablespoons lemon juice

  Preparation:

Rinse and dry lettuce. Hand cut in big pieces. Place in a salad bowl.

Melt sugar and butter with chopped pecans to caramelize. Once caramelized, transfer to a greased surface to dry.

Mix lettuce with crumbled Roquefort cheese, figs and pecans.

Decorate with figs and a few caramelized pecans.

Dressing:
Mix all dressing ingredients and pour over salad just before serving.
