SCRAMBLED EGGS WITH RICOTTA CHEESE AND CHIVES
Ingredients :
8 eggs
2 tablespoons chives, finely chopped
1 cup fresh ricotta cheese
2 tablespoons unsalted butter, at room temperature
Salt
Pepper
Preparation:
Beat eggs with ricotta cheese, chives, salt and pepper in a medium size bowl, until thoroughly mixed.
Melt butter in a non stick skillet over medium heat. Pour egg mixture to skillet and stir gently with a silicone spatula. Cook and stir occasionally until eggs set lightly. Serve immediately over toasts o transfer to a serving dish.
