FESTIVE SWEET POTATOES
Ingredients :
3 lb 5 oz (1 ½ k) sweet potatoes, peeled, cooked and cut into thick slices
½ cup brown sugar
1 tablespoon cornstarch
Salt
Pepper
1 cup orange juice
¼ cup golden raisins
2 tablespoons dry sherry
Nuts or pecans toasted, chopped
½ teaspoon orange peel
1 can of halved peaches, drained, cut in wedges
Preparation:
Arrange sliced sweet potatoes in an ovenproof serving dish and season with salt and pepper.
Pour orange juice into a medium size pan and add sugar, cornstarch and raisins. Cook and bring to a boil stirring constantly over high heat. Add sherry, nuts, orange peel and mix.
Arrange peach wedges over sweet potatoes and cover with the orange juice preparation.
Bake in the preheated oven to 350°F (180°C) for 25 minutes or until syrup thickens.
Serve with pork or turkey.
