PARMESAN ROASTED POTATOES   
  Ingredients :
    2. 4 lb (1 k) pound new potatoes, unpeeled, cut into chunks
    4 tablespoons olive oil
    2 teaspoons salt
    Pepper
    1 ¼ cup grated Parmesan cheese
    2 tablespoons unsalted butter

  Preparation:

Heat oven to 400º F. In a medium bowl, combine the potatoes, olive oil, salt pepper and parmesan cheese. Transfer to a roasting pan or 9 x 13 inch (17x25 cm) baking dish. Roast, stirring once, until golden brown and crisp, about 50 minutes. Serve hot or at room temperature.
