OLLUQUITO AND MUSHROOM RICE   
  Ingredients :
    3 tablespoons butter
    1 teaspoon garlic, finely chopped
    1 teaspoon herbs (thyme, tarragon, marjoram)
    1 teaspoon Worcestershire sauce
    1 lb (˝ k) mushrooms
    10˝ oz (3 cups) ollucos
    3 cups white rice
    1˝ cup heavy cream
    1 cup parmesan cheese, grated
    Salt
    Pepper

  Preparation:

Melt butter in a large skillet, add garlic and sauté mushrooms. Add herbs and mix. Reserve.

Peel ollucos and grate them coarsely. Reserve.

Prepare rice the usual way. When rice is cooking and water has just evaporated, place ollucos on top without mixing them with rice. Cover pan again and let rice cook completely.

Add mushrooms and combine with rice and ollucos. Add cream and parmesan cheese. Combine thoroughly and correct seasonings.

Serve.
