MARINATED FISH SLICES WITH MANDARIN JUICE   
  Ingredients :
    1.2 lb (500 g) raw halibut filet, cut into very thin slices
    Juice of 7 mandarins
    Juice of 7 limes
    1 - 2 red chilis, seeded and deveined, finely chopped
    Cilantro leaves, finely chopped
    Salt
    Pepper
    1 mandarin, peeled, separated into wedges, no pith

  Preparation:

Arrange halibut slices overlapping slightly on a serving dish or plate.
Combine mandarin juice with lime juice, gradually (to taste) and chopped red chili.
Season with salt and pepper.
Pour over the fish slices. Garnish with mandarin wedges and sprinkle chopped cilantro.
