Ingredients :
    1 cup vegetable oil
    2 cups brown sugar
    2 cups cake flour, sifted 3 times
    2 teaspoons baking powder
    1 pinch of salt
    1 teaspoon vanilla
    3 cups shredded carrots
    4 eggs, mixed
    1 cup nuts (optional


Combine oil with sugar with a spoon. Stir in eggs and vanilla.
Sift flour, 3 times, with baking powder and salt and fold into the egg mixture. Add shredded carrots and mix.
Pour mixture into a previously greased and floured tube pan.
Bake in the middle of a preheated oven to 350F (180C) for 50 to 55 minutes.
Remove from the oven and cool. Invert onto a serving plate and serve.
