   Ingredients :
3 cups zucchini, sliced very thin
1 medium size onion, finely chopped
2 tablespoon chopped parsley
1/2 teaspoon oregano
1 garlic clove, minced
cup grated parmesan cheese
4 eggs, slightly beaten
1 cup of flour
1 teaspoon baking powder
1 tablespoon melted butter
1 cup vegetable oil


Mix zucchini with onion, parsley, oregano, garlic and parmesan cheese in a large bowl. Add eggs and mix well. Season with salt to taste. Combine flour, baking powder, salt and pepper in a small bowl. Add the flour mixture to zucchini, mix and stir in melted butter and oil.
Pour mixture into a greased baking dish (9x13x2 in./ 23x31x5 cm) and bake at 350 (180C) for 25 minutes or until golden.
Remove from oven, cut into squares and serve warm.

Preparation: 15 minutes
Oven: 25 min.
        Makes about 4 dozens
