    CARAMELIZED ONION SAUCE     

   Ingredients :
 
1 lb (2 k) red or white onion, cut in thin julienne
½ cup butter

1 – 1 ½ cup red vinegar, approximately
1 cup sugar, approximately
Salt

   Preparation:

Melt butter in a large skillet. Add onion and cook until transparent. Cover skillet and continue cooking onion until very tender. Stir in vinegar and sugar and cook uncovered until onion is dark color and caramelized. Add more vinegar or sugar if desired.
The longer the onion is cooked the darker the sauce turns.
        10 – 12 servings
