    BALSAMIC PORTOBELLO SALAD     

   Ingredients :
  Portobellos marinade:
10 medium size portobellos, cleaned, and cut in thick slices
¼ cup balsamic vinegar
1 garlic clove, minced
½ cup olive oil
Rosemary
Salt
Pepper

Portobello Dressing:
¾ cup mayonnaise
1 ½ teaspoon green onion (white part), chopped
2 garlic cloves, minced
¼ cup water, approximately
Salt
Pepper

Salad:
3 large tomatoes, peeled, seeded and cut in eight
2.4 lb (1 k) fresh spinach leaves hand cut in pieces
Green lettuce
Manchego or Parmesan cheese, thin slices

   Preparation:
Portobellos marinade:
Combine balsamic vinegar with garlic, rosemary, oil, salt and pepper. Marinate portobellos in this mixture for 20 minutes. Drain and set aside.

Portobello Dressing:
Combine mayonnaise with portobellos, green onion, salt, pepper, garlic and water.

Salad:
Arrange lettuce and spinach in a salad bowl and combine with tomatoes. Toss in portobellos and dressing.
Garnish with Manchego or Parmesan cheese shavings.
        4 – 6 servings
