    EGGS, COTTAGE CHEESE AND STRING BEANS SALAD     

   Ingredients :
 
1 lb (½ k) stringbeans, rinsed, edges trimmed
1 lb (½ k) cottage cheese
6 eggs, boiled, cut in 4 wedges
2 red pepper, seedless, cut julienne
6 tablespoons French Dressing
Salt

French Dressing:
1 cup tomato juice
Pinch of salt
1 teaspoon lemon juice
1 teaspoon onion, finely chopped
¼ teaspoon Worcestershire Sauce
½ teaspoon crushed garlic
Salt
Black pepper

   Preparation:

Cook stringbeans in salted water, uncovered until tender. Place on colander and rinse with cold water. Arrange stringbeans in a salad bowl.

Place cottage cheese on the center of the stringbeans and arrange eggs around cottage cheese.

Sprinkle on top with red pepper.

Before serving pour dressing over stringbeans and peppers.

French Dressing:
Place all ingredients in a jar. Cover and shake. Can be kept in the refrigerator.

Yields: 1 cup
