Place half of the white onion on the bottom of a lightly greased ovenproof serving dish.
Cover with a layer of tomatoes. Sprinkle with butter on top.
Arrange fish fillets, previously seasoned with salt and pepper, on top.
Repeat a layer of remaining onion, tomato and butter.
Preheat oven to 350ºF (180ºC).
Before cooking fish, pour soy sauce and sprinkle herbs on top. Cover baking dish with aluminum foil. Bake for 15 minutes, uncover and pour wine. Cover again and return to the oven for 15 more minutes.
