    POT ROAST IN TOMATO SAUCE     

   Ingredients :
 
2 lb 4 oz (1 k) boneless beef roast
Vegetable oil, necessary amount
3 lb 5 oz (1 ½ k) tomatoes, peeled, seeded and chopped
2 medium size onions, finely chopped
1 teaspoon garlic, minced
1 tablespoon sugar
2 bay leaves
Salt
Pepper
Optional: Rub beef roast with salt, pepper, garlic and vinegar and marinate overnight

   Preparation:

Heat the necessary oil in a deep skillet and brown beef roast all over. Remove from the skillet.
In the same oil fry onion until crystal clear. Stir in garlic and continue cooking until onion is tender. Add tomatoes and cook 10 minutes. Season with salt pepper and sugar and mix. Add beef roast to tomato mixture and bring to a boil. Lower heat and continue cooking, stirring occasionally, approximately 1 hour or until beef is very tender. Correct seasoning.
Remove from the heat and cool. Cut beef into thin slices.
Serve with salad, cooked rice or vegetables.
