    MANGO, SPINACH AND DUCK PROSCIUTTO APPETIZERS     

   Ingredients :
 
1 french baguette bread cut into in. slices
2 3 mangoes, approximately, cut into thin slices and then chopped
Duck prosciutto or duck musciame, chopped
Baby spinach leaves, cut into medium size pieces
1 tablespoon, cilantro, finely chopped
1 fresh yellow aji (chili), seeded and deveined, chopped
2 tablespoons of balsamic or red vinegar
8 tablespoons extra virgin olive oil
Chopped basil leaves
Extra olive oil, to drizzle over

   Preparation:

Lightly brush olive oil on bread slices. Sprinkle salt and toast in a preheated oven to 300F (150C) until slightly toasted. Remove from the oven and reserve.
Mix duck prosciutto mango, aji or chili, and cilantro.
Season with vinegar, olive oil, salt and pepper.
Place a spinach leaf on each bread slice and spoon some of the mango and duck mixture on top. Sprinkle chopped basil leaves and drizzle olive oil on top.
