Place flour in a bowl or in a horizontal surface and make a well in the center.
Place soft butter and sugar in the well and start gathering all together with a pastry blender. Finish with your hands and wrap in plastic wrap. Refrigerate at least 10 minutes.
Roll out dough on a floured surface and cut different shapes of cookies. Place on an ungreased cookie sheet.
Bake in preheated oven to 350°F (180°C) until slightly golden. Cool and keep in an airtight container.
Optional: To make chocolate butter cookies, add 2 tablespoons cocoa to the dough.
