   Ingredients :
k anchovies
cup white vinegar
1/ 2 cup extra virgin olive oil
2 cloves of garlic
1 tbs. chopped parsley


Clean the anchovies by removing heads, the innards and spine. Cut them in half, vertically. Rinse thoroughly in a bowl with iced water. Dry them up with paper towel. Lay the anchovies flat in one layer in a shallow dish. Pour in vinegar. Refrigerate for two hours covered with plastic wrap.

Remove anchovies from refrigerator, drain well from vinegar. Pour the olive oil into the dish. Finely chop the garlic and parsley, and sprinkle over the anchovies. Add salt. Seal tightly with plastic wrap and place in refrigerator to marinate for 1 hour before serving.

Note: It is important to use a glass or ceramic dish. Never use a metal dish.
