    STUFFED ONIONS     

   Ingredients :
 
4 medium size white onions
1 lb (400 g) cottage cheese
4 tablespoons grated parmesan cheese
Salt
Pepper
1 teaspoon dried thyme
ají amarillo fresco / fresh yellow aji (chili)blended (optional)
Salt
Pepper
2 tablespoons red bell pepper, finely chopped

   Preparation:

Preheat oven 350 °F (180 °C). Place whole onions,on a baking pan with skin. Bake them for 30 minutes, until just tender and onion skin turns golden.

Remove onions from oven, cool 10 minutes and peel off skin, carefully.

Scoop out centers and finely chop them. Combine with cottage cheese, thyme, red bell pepper, salt and pepper. If desired fresh blended aji can be added too. Fill centers with mixture and sprinkle grated parmesan cheese on top.

Broil in oven until golden. Serve hot.
