   Ingredients :
1 cup cream
1 lb (2 k) spinach
3 tablespoons butter
2 tablespoons all purpose flour
cup undiluted evaporated milk
cup grated parmesan cheese


Rinse spinach, chop them finely and cook a few minutes in salted water. Drain.

Melt half of butter in a medium size pan, add spinach and pinch of nutmeg. Remove from heat and add sifted flour.

Return to heat and add gradually half of cream and the milk. Add half of parmesan cheese. Season with salt and pepper.

Remove from heat and pour carefully the rest of cream, to prevent surface from drying.

Before serving, heat and add rest of butter and grated cheese.
