    BAKED BEANS     

   Ingredients :
 
1 lb (500 g) blackeye beans
2 medium size onions, finely chopped
1 tablespoon ají amarillo fresco / fresh yellow aji (chili) blended
1 tablespoon ají panca en pasta / sundried red aji (chili) paste
3/4 cup oil
2 garlic cloves, crushed
10 slices of bacon
1/4 cup brown sugar
Ľ cup ketchup (tomato sauce)
˝ cup croutons (diced fried bread)
Salt
Pepper

   Preparation:

Soak beans overnight. Cook them in water until soft.

Process or mash half of cooked beans.

Sauté, in a large skillet with oil: onion, garlic and aji until cooked.

Brown bacon until crispy. Drain on paper towel. Chop and set aside. Reserve fat.

Add brown sugar to fat, together with ketchup, beans (both whole and mashed) and half of bacon. Combine well and bring to a boil for a few minutes. Season.

Transfer this mixture to a baking dish.

Cover with rest of bacon, croutons and chopped parsley.

Place in oven to broil.

Serve with white rice.

A delicious and easy recipe. I did not use aji, since it is difficult for me to find it around this area.
