    BROILED SOLE WITH ONION AND GRAPEFRUIT DRESSING     

   Ingredients :
 
6 sole fillets
1/3 cup olive oil
3 tablespoons grapefruit juice (fresh if possible)
3 tablespoons lemon juice
Salt
Pepper
4 tablespoons chopped chives
½ teaspoon mint leaf chopped
2 small onions cut in slices

   Preparation:

In a small bowl prepare dressing. Combine, oil, grapefruit juice, lemon juice, salt, mint leaf chopped and 1 tablespoon chives.

Place fillet in a shallow dish. Scatter onion over the fish and pour half of dressing over the top. Marinate for 20 minutes.

Heat broiler.

Put fish on baking sheet, skin side down. Top with onion and broil fish about 6 inches (12 cm) from heat. Fish will cook in approximately 7 minutes, depending on the heat and fish thickness.

To serve, pour remaining dressing over fillets and sprinkle with chopped chives.
