    FETTUCCINI WITH CHICKEN, SPINACH AND ORANGE CREAM     

   Ingredients :
 
4 chicken breasts, boned, skinless, cut in small pieces
3 tablespoons oil
Salt
Pepper
1 pound (1/2 k) spinach, washed and dried
3 garlic cloves, minced
¾ pound (350 g) mushrooms, thinly sliced
½ teaspoon orange rind
1 ½ tablespoon orange juice
1/3 cup chicken broth
½ cup heavy cream
¾ pound (350 g) fettucini

   Preparation:

Heat 1½ tablespoon oil in a skillet. Season chicken with salt and pepper and sauté until just cooked. Remove from the skillet.

In the same pan heat rest of oil and add garlic and mushrooms. Cook stirring for 3 minutes. Add spinach and let it wilt. Season.

Add orange rind and juice and chicken broth. Simmer for 3 minutes and add cream. Correct seasoning. Remove from fire.

Cook fettucini in salted water until just done. Drain pasta and toss with chicken and sauce.
