    GERMAN POT ROAST WITH ORANGE     

   Ingredients :
 
5 pounds (2 k) boneless beef roast
3 tablespoons oil
1 medium size onion in slices
2 bay leaves
Salt
Pepper
½ teaspoon black peppercorn
2 teaspoons lemon rind
1 ½ cup orange juice
¼ cup lemon juice
2 teaspoons brown sugar
3 teaspoons flour

   Preparation:

Season beef with salt and pepper. Heat oil in skillet, and brown beef until golden.

Place onion, bay leaves and peppercorns in an oven pan and transfer beef to it. Combine orange juice, lemon juice, orange rind, sugar and salt and pour over beef. Cover with aluminum foil.

Cook in oven 350° F (180° C), for 2 ½ hours or until very tender, basting beef frequently. Remove beef from oven. Cut in slices.

Drain sauce and pour in a saucepan. Boil for 5 minutes. To thicken sauce, dilute 2 teaspoon flour in ½ cup water and stir in while boiling.

Serve over roast.
