    SAUTEED CHICKEN CHINESE STYLE     

   Ingredients :
 
4 chicken breasts, skinless, cut in medium size pieces
¾ cup vegetable stock
3 – 4 tablespoons soy sauce
½ green pepper, seeded and deveined, cut in medium size cubes
½ red pepper, seeded and deveined, cut in medium size cubes
4 celery stalks, cut in diagonal pieces
4 green onions, cut in diagonal pieces (both green and white parts)
1 garlic clove, finely chopped
2 tablespoons vegetable oil
Soybean sprouts (optional)
Salt
Pepper

   Preparation:

Heat oil in a medium size skillet and sauté chicken pieces until golden. Chicken does not have to be fully cooked. Remove chicken from skillet and set aside.

In the same skillet, sauté garlic. Stir in peppers, celery, and green onion. Sauté for a few minutes and add chicken pieces together with the vegetable stock. Season with salt and pepper. Bring to a boil until chicken is tender and the liquid has reduced slightly. Correct seasoning.

Before serving add soybean sprouts if desired.
