    CHEESE AND ROSEMARY PUFFS     

   Ingredients :
 
2 cups sifted all purpose flour
½ teaspoon salt
¼ teaspoon pepper
2 teaspoons baking powder
½ lb (250 g) butter or margarine, at room temperature
1 lb (500 g) grated parmesan cheese
1 teaspoon mustard
1 teaspoon dry thyme, crushed
1 teaspoon dry rosemary, crushed

   Preparation:

Sift flour with salt, pepper and baking powder.
Whip butter or margarine and add flour mixture. Add grated cheese, mustard, thyme and rosemary. Combine.
Form ¾ inch (2 cm) balls with hands and place cheese balls on a greased cookie sheet. Cover with plastic wrap and refrigerate for 1 hour.
Bake in preheated oven to 350ºF (180ºC) for, approximately 20 minutes. Serve cold.
Keep in an airtight container.
        Yields: 60 cheese and rosemary puffs
