Place the racks in the lower third of the oven and preheat it to 325°F (170°C).
Line 2 oven sheets with parchment paper and arrange salami slices on top in one layer.
Lower oven temperature to 200°F (95°C) and bake in the oven for 20 minutes, switch positions halfway through the baking and cook 10 - 15 minutes more. Turn off the oven and leave salami until edges begin to curl slightly. Remove from the oven, drain on paper towl and cool on a rack. Salami will turn crisp as they cool.
Keep in an airtight container until serving time.
