Melt butter in a skillet or in a large saucepan. Add onions and cook over medium heat, stirring occasionally until very tender and transparent. Onions must not be browned. Season with salt and pepper. Transfer onions to a lightly greased baking dish.
Whip eggs just until well mixed, add heavy cream and season with salt, pepper and nutmeg. Pour this mixture over onions and sprinkle over with parmesan cheese. Bake in preheated oven to 425°F (220°C) for 20 minutes, approximately.
Remove from the oven and sprinkle over with paprika and chopped parsley.
