                                             Cook bacon in a large skillet until crisp and golden.  Remove from the skillet with a slotted spoon and transfer to paper towel to drain.  Reserve 4 tablespoons from the bacon´s fat.
Combine potatoes with the onions, ½ of the sage leaves, the melted butter and the reserved fat in a large bowl. Season with salt and pepper and toss to coat.  
Spread potato mixture on a large baking sheet and bake in preheated oven to 375°F (190°C) for 1 hour, stirring occasionally.  Raise temperature to 400°F (200°C), add bacon, mix and continue cooking for 15 minutes or until potatoes are soft and starting to brown.
Remove from the oven and transfer to a serving bowl.  Season to taste with coarse salt and pepper.  Sprinkle over with remaining sage.
