   Ingredients :
10 oz (300 g) bacon slices cut crosswise into thin strips
4 lb 8 oz (2 k) new potatoes, rinsed, dried and halved
4 cups red onion, chopped
cup fresh sage leaves, torn into small pieces
2 tablespoons melted butter
Coarse salt
Black pepper


Cook bacon in a large skillet until crisp and golden. Remove from the skillet with a slotted spoon and transfer to paper towel to drain. Reserve 4 tablespoons from the bacons fat. Combine potatoes with the onions, of the sage leaves, the melted butter and the reserved fat in a large bowl. Season with salt and pepper and toss to coat. Spread potato mixture on a large baking sheet and bake in preheated oven to 375F (190C) for 1 hour, stirring occasionally. Raise temperature to 400F (200C), add bacon, mix and continue cooking for 15 minutes or until potatoes are soft and starting to brown. Remove from the oven and transfer to a serving bowl. Season to taste with coarse salt and pepper. Sprinkle over with remaining sage.
