History
When the Spanish arrive to Peru, bringing their culture, religion, customs and language, they find, not primitive tribes, but a politically organized empire with highly developed agriculture, using extraordinary systems of irrigation, a perfect system of terraces in the mountains and an equitable distribution of lands for cultivation. They also find a proliferation of foods unknown in Europe whose preparation was a mixture of cultural influences of the peoples of the Andes and the coastal regions. From this meeting of both cultures and the combination of their different ways of eating developed a hybrid cooking of excellent taste and enormous creativity.

Historical references indicate that food has always been of great importance in Perú. Discovered in the ancient tombs of the Incas were foods that had been placed there to accompany the deceased person into eternity.

There is a great variety of plants in Peru due to its different climates, and the clever use of this variety of different plants gives a distinct personality to Peruvian cooking.
