    FISH FILLETS WITH GREEN ONION AND AJÍ (CHILI)     

   Ingredients :
 
6 fish fillets, cleaned, rinsed, dried
2 cups green onion (white and green part) finely chopped
2 fresh yellow ají, seeded and deveined, cut in strips
5 ˝ oz (150 g) fresh farmer’s white cheese (may be replaced with ricotta cheese)
Milk
Butter
1 tablespoon vegetable oil
Parmesan cheese
Salt
Pepper

   Preparation:

Heat oil and butter and add green onion. Cook until tender. Blend onion, cheese and ají with the necessary amount of milk to form a thick sauce. Season with salt and pepper.
Season fish with salt and pepper and soak in milk and arrange the on the bottom of a greased serving ovenproof dish. Bake in a preheated oven to 350şF (180şC) until fish is done.
Five minutes before fish is ready, remove fish from oven and pour sauce over fish. Sprinkle parmesan cheese on top. Return to oven until fish is cooked.
