    BAKED FISH WITH ONIONS     

   Ingredients :
 
10 fish fillets (sole or similar) medium size
6 lb 8 oz (3 k) white onion, cut julienne style
3 tablespoon butter, to cook onion
1 tablespoon oil
½ cup heavy cream
Grated parmesan cheese
Salt
Pepper

   Preparation:

Heat butter with onion and add onions. Cook onions covered, until transparent, not browned.
Spread onions on the bottom of an ovenproof serving mold. Arrange fish fillets on top, previously seasoned with salt and pepper.
Sprinkle over with parmesan cheese.
Pour heavy cream on top.
Bake in preheated oven to 350ºF (180ºC) for 15 minutes or until fish is tender.
