    SHAMBAR     

   Ingredients :
 
2.2 lb (1 k) shambar wheat
9 oz (250g) beans
9 oz (250g) dry peas
9 oz (250 g) chickpeas
9 oz (250g) fava beans
9 oz (250g) pork skin, cut in small pieces
9 oz (250g) smoked pork, cut in small pieces
2 – 3 onions, diced
Garlic, minced
Dry Yellow ají (mirasol) paste
Oil
Salt
Pepper
2 sprigs of hierbabuena, chopped
Oregano
Cilantro, chopped
Maize

   Preparation:

Soak grains in water, overnight. The next day, cook chickpeas and beans and bring to a boil. When they start boiling, drain and change water. Add wheat and peeled fava beans. Add pork´s skin and smoked pork; continue cooking.

In another saucepan heat oil and add chopped onions, and dry yellow aji paste, garlic and oregano. Cook until tender and add to soup.
Season with salt and pepper. Add hierbabuena and cilantro and boil for a few minutes.
Serve with fried maize.
