MIXED LETTUCE SALAD
Ingredients :
6 cups torn mixed lettuce
2 tablespoons olive oil
2 tablespoons balsamic or cider vinegar
3 garlic cloves, minced
Salt
2 or 3 mandarins (depending the size) cut in segments
1 cup seedless red grapes, halved
1 medium red onion, thinly sliced and rings separated
½ cup toasted slivered almonds
Preparation:
In a small bowl, combine olive oil, vinegar, garlic and salt. Whisk until well blended. Chill until serving time.
In a large salad bowl, combine lettuces. Add mandarin, grapes and as much red onion as desired. To serve: Pour dressing on top of the salad; toss to coat. Sprinkle with almonds.
