Place butter in the mixer with white and brown sugar until creamy.
Reduce speed to medium and add eggs and vanilla and continue beating until thoroughly mixed. Reduce speed to low speed and add flour, salt and baking soda. Remove bowl from the mixer and fold in potato chips and chocolate chips. Drop spoonfuls of batter on an ungreased cookie sheet, leaving 2 in. (5 cm) between cookies. Bake in preheated oven to 350ºF (180ºC) for 15 – 20 minutes. Remove from the oven and cool 3 minutes. Transfer to a rack and let cookies cool completely.
