    PARMESAN POLENTA FOR TWO     

   Ingredients :
 
1 cup of milk
1 cup chicken stock
½ cup polenta or cornmeal
¼ cup grated parmesan cheese
1 tablespoon extra virgin olive oil
Salt

   Preparation:

Heat milk and chicken stock in a saucepan over medium heat and bring to a boil. Gradually whisk in polenta and reduce heat. Whisk polenta over low heat until thick, approximately 5 minutes. If necessary thin polenta with water or chicken stock. Season to taste. Remove from heat and add olive oil and parmesan cheese.

Serve with chicken or beef.
