    SWEET POTATO AND SNOW PEAS STIR FRY A L ÓRANGE     

   Ingredients :
 
1.2 lb (500 g) sweet potato, peeled and cubed
1 cup snow peas, trimmed
1/3 orange marmalade
¼ cup orange juice
1 tablespoon white vinegar
1 tablespoon sugar
½ teaspoon arrowroot
2 teaspoons fresh ginger, finely chopped
1 teaspoon garlic, minced
2 teaspoons fresh yellow aji, seeded and deveined, finely chopped
2 tablespoons peanut oil (vegetable oil may be used)
¼ teaspoon sesame oil (optional)
Salt
Fresh yellow aji, sliced

   Preparation:

Cook sweet potato in boiling salted water until they are nearly tender. Add snow peas and cook 1 minute more. Immediately drain and plunge into ice water. Drain when vegetables are chilled. Reserve.
Combine orange marmalade with orange juice, sugar and arrowroot in a small bowl and set aside.

Heat peanut butter in a skillet over medium heat and sauté garlic with ginger and aji. Cook for 1 minute, add reserved vegetables and mix. Stir in the marmalade mixture and bring to a boil. Lower heat and cook until slightly thickened. Remove from the heat, correct seasonings, stir in sesame oil and serve.
Garnish with aji slices.
