PAPPARDELLE WITH SPINACH AND PARMESAN CHEESE
Ingredients :
9 oz (250 g) pappardelle or fettuccine
4 cups spinach leaves, cut into medium pieces
¾ cup grated parmesan cheese
2 tablespoons butter, cut into small pieces
Salt
Pepper
Preparation:
Cook pappardelle or fettuccine in boiling water with salt until al dente.
While pappardelle are cooking, place spinach in a large bowl and add butter, parmesan cheese and mix well.
Drain pasta, add to the bowl and toss to coat. Season with salt and pepper to taste.
Serve immediately.
