    SWORDFISH FILLETS WITH LEMON AND PARSLEY SAUCE     

   Ingredients :
 
8 swordfish fillets (8oz/200g aprox.)
1 ¼ cups fresh parsley, chopped
1 ½ tablespoons lemon zest
2 teaspoons garlic, finely chopped
1 cup olive oil
¼ cup fresh lemon juice
Salt
Pepper
Lemon wedges

   Preparation:

Combine parsley, lemon zest and garlic in a small bowl. Add olive oil and lime juice, salt, pepper and mix. Place swordfish fillets in a single layer in a baking dish and spoon half of the parsley sauce over the fish. Turn fish over to coat with the sauce. Cover and refrigerate for 3 hours, turning the fish occasionally.

Preheat broiler and place fish with sauce next to broiler. Broil fish 3 to 4 minutes per side approximately, until fish is tender and cooked.

Remove from the oven, and transfer to a serving dish or serve in plates. Pour remaining sauce over and garnish with lemon wedges.
